There are thee Andalusian dishes known everywhere: gaspacho, tortilla española and the tapas. Seville is obviously not lacking in pubs and restaurants where you will be able to savor the original flavor. Remember that restaurants in Spain serve dinner from 9:00 to 11:00 pm and that in the morning, breakfast (desayuno) is from 10:30 am on, with orange juice, coffee and toast, a sandwich with tomato and slices of prosciutto (tostada jámon y tomate) or with butter and cooked ham (mantequilla y jámon york). You'll also, however, be able to find the classic butter and jam!
Gaspacho is a cold soup made mostly of the vegetables that grow in the gardens of Andalusia. It normally contains garlic, tomato, carrots, bell peppers and cucumbers, olive oil and vinegar. Stale bread is dipped into the water of the tomatoes, making it an overall delicious soup, perfect in the summer! Salmorejo is the more dense version of gaspacho, enhanced with pieces of Iberian ham, onions, boiled eggs or anything you want (or whatever the cook wants!)
Well known during the dictatorship, when misery began to test the Spaniards, the tortilla is essentially an omelet. And what an omelet! It's made of many eggs, potatoes (fried or boiled) and onions! Highly nutritious and enriched with ingredients such as salami, peppers or spinach, the tortillas will become your faithful companion in Seville.
An absolute must in Seville is "tapear", going out to eat tapas, delicious appetizers served in small portions and accompanied by a glass of wine, cerveza (beer) or "tinto de verano" a beverage made of red wine and lemon or orange. "Ir de tapeo" is the tapas-bar stroll spread all over the Spain, the most typical everyday ritual in Andalusia you can't miss standing at a bar sharing tapas with friend.
The most worth trying tapas are certainly the pinchitos morunos, a dish inherited from Arab cuisine made of pork or chicken with various spices, montaditos, little toasted sandwiches filled with ham, anchovies, sausage, shrimp, etc.. and espinacas con garbanzos, chickpeas spinaches with fried bread, flavored with garlic, cumin, bay leaves, salt and paprika.
