A tigella is a soft low-rising pita-like bread that is great for cold cuts and local dairy products.
The flour, water, yeast, milk, oil and salt dough must be very soft before rising and cooked in a special tigella pan. The result is a tigella served hot with prosciutto, Parmigiano-Reggiano, lard or even nutella.
The puffed shape typical of the fried gnocco is obtained with the same ingredients as the tigella and is served hot, great in any season, for breakfast, lunch or dinner, appetizer or snack.
